After being an airline captain for decades, I’ve become obsessed with systems. Being late isn’t an option. That philosophy runs through our entire business. When we arrive at an event, we’re early. That doesn’t mean they’ll produce exceptional coffee all day at a busy event. We invest in the best commercial equipment (only La Mazocco )from industry-leading manufacturers because reliability matters. Good equipment also allows experienced baristas to work faster while maintaining consistency. That’s one of the reasons premium operators can comfortably serve large numbers of guests without sacrificing quality.


This is something very few people talk about.


The coffee we use (Single o) costs us around $80 per kilogram. That’s a deliberate decision. Saving money on coffee beans might reduce costs, but guests taste the difference. The term “specialty coffee” also gets used very loosely. It’s a bit like calling Australian sparkling wine “Champagne" ... you jsut cant!.

We choose genuinely specialty-grade coffee because the coffee itself is the centrepiece of the experience. To us, saving a few dollars per kilogram simply isn’t worth compromising the product.
